Starch is simply a large carbohydrate. When you ingest starches, the digestion process is similar to how the body digests protein. Enzymes called amylase come and basically break down the large “chain” into smaller pieces, which are reconnected. It is then absorbed into the intestines. Starch is a primary food source for all humans, and is a main source of glucose, which is a sugar molecule, used for energy. Starch is a carbohydrate. It is found in many foods, because it is in many staple crops (corn, wheat etc)

Too much starch can be harmful to your health. Since they ultimately become sugar when broken down during digestion it can have adverse affects on health. Too much sugar causes unnecessary insulin production, which can have a lot of bad affects in your body. It can even go as far as causing serious problems such as diabetes, as well as affecting multiple organs. Also, since it becomes sugar, it could result in unnecessary and unhealthy weight gain, which has a multitude of nutritional problems as well.
